It’s so creamy and not watery at all. If you don’t like potato gnocchi you can leave it out and add potato chunks or any other veggie you like. Just add it in right after you saute the onions and celery. Ingredients 1 C. Yellow Onion finely chopped 1 C. Celery diced small 1 TBSP. Olive Oil 1 TBSP. Minced Garlic (3 cloves) 3 1/2 C. Warm Water 6 Tsp. Chicken broth powder 1 Tsp. Celery Salt Salt and Pepper to your taste 2 1/2 C. Cooked Chicken shredded 16 oz Package of Potato Gnocchi 5 TBSP. Butter 6 TBSP. Flour 2 C. Milk 1/3 C. Heavy Cream 2 C. Fresh Spinach chopped big Shredded Parmesan Cheese for topping Heat the olive oil in a large dutch oven or saucepan over medium high heat and then add the onions and celery. Saute for about 7 minutes. Now add the garlic and saute for 2 more minutes. Next mix the water and the broth powder together really well and make sure you get out all the clumps. You can use already made chicken broth if you would like. Now add the broth to the saucepan. Next add your celery salt, pepper and salt. Mix well, bring it to a boil then reduce heat to medium low and cover. Simmer for about 15 minutes or till veggies are nice and tender. While you’re waiting for it to simmer start melting your butter in a small saucepan. Now add your flour and whisk constantly for a minute. It will look like this. Keep whisking and pour in your milk. Whisk fast to get rid of all the lumps. Don’t stop whisking until it comes to a light boil. Now pour in your heavy cream and keep whisking. Once it becomes thick remove it from the heat and set to the side. Now add your potato gnocchi to the broth, mix and cover. Simmer for the recommended time on the package. I did 7 minutes. Next add the milk mixture to the broth and stir well. Now add in your shredded chicken and mix. Next add your spinach and stir well. Cook a few minutes until the spinach has wilted. Now serve hot in a bowl and top with shredded Parmesan cheese. I hope you enjoy this dish as much as I did. Don’t forget to make some fresh bread to dunk in it. Search my recipes for homemade bread. Want to see a certain recipe? Just shoot me an email and I’ll see what I can do. Blessed Be! *** About the Author: Sarah Mascorro AKA Pixie Witch.
