Hmmmm so many ideas popped up but I went with my Zucchini Lasagna. I also made a zucchini bread but didnt take pics. I&#8217;ll add it in a couple of months. Ok ready to make this yummmy dinner? Mix well and cook. You\u2019ll notice that within a couple minutes the paper towels will be wet already. Hopefully you all will love me haha.<\/span><\/span><\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Zucchini Lasagna I was gifted this HUGE beautiful Zucchini that my friends son Isaias grew. Isaias you are amazing buddy. Look at the goodies he grew. So what do I do with so much zucchini? Hmmmm so many ideas popped up but I went with my Zucchini Lasagna. I also made a zucchini bread but didnt take pics. I&#8217;ll add it in a couple of months. Ok ready to make this yummmy dinner? Lets get started. Ingredients 1 tbsp olive oil 1 large onion chopped 4 cloves garlic minced 1 lb ground turkey or beef 2 tsp Italian seasonings 1 tsp dried basil 1 tsp garlic powder 1 tsp salt 1\/2 tsp pepper 28 oz diced tomatoes with green peppers, celery and onions 1\/2 a giant zucchini haha or about 3-4 small zucchinis 2 cups mozzarella cheese shredded 2 cups Italian style cheese 1 1\/2 cups ricotta cheese Parmesan cheese grated to sprinkle on top Lets start by peeling the zucchini Now slice the zucchini into slices about 1\/4&#8243; thick if you are using a huge zucchini or about 1\/4&#8243; thick for small ones. Next add the olive oil to a large skillet over medium heat. Add onion and cook for a couple minutes until onion is soft. Add the garlic powder, Italian seasonings,basil, salt and ground turkey. Mix well and cook. Drain the grease. Now add the tomatoes, stir and simmer for 10 mins. Stir well and your meat sauce is now ready. Next preheat oven to 375 F degrees. Use a 9\u00d713 inch baking dish. Now lets put it together. Start with a layer of zucchini. Then sprinkle with the Italian and mozzarella cheese. Now add some meat sauce. Now add some yummy ricotta cheese. Now repeat 2 more times so you have 3 layers. End it with another layer of the 2 cheeses then sprinkle with the parmesan cheese. Put in the oven for about 35 to 45 minutes or until the top is starting to get golden and the cheese is bubbly. Keep an eye on it mine got a bit to browned ooops lol Let it cool for 10 mins before cutting. Serve with garlic bread and or a salad. Tips Sometimes you can remove excess water from the zucchini by laying out the zucchini slices over paper towels, drizzle some salt over the slices of zucchini, then place another paper towel over the top to soak up all the water. You\u2019ll notice that within a couple minutes the paper towels will be wet already. I didnt need to do this with mine but it seems the smaller ones you might want to so it doesnt get mushy when you bake it. You can also add muhrooms, green bell peppers or any other veggies you want to it. Pretty simple recipe right? If you try it I&#8217;d love to hear back from you. All my contact info is below.
