Theres always so much going on at my house on that day. Getting ready for the trick or treaters, Samhain rituals, Witches New Years and it\u2019s also my wedding anniversary. With that being said I always bake up a bunch of treats for everyone and this is one of my favorite cookies for this time of year. Soon it may be your favorite. It is a pretty simple recipe and the taste is just amazing. So lets get started. Ingredients 2 cups butter, softened 2 cups white sugar 2 teaspoons baking powder 2 teaspoons baking soda 1 1\/2 teaspoon salt 2 1\/2 teaspoon ground cinnamon 1\/2 teaspoon ground allspice 2 eggs 1 1\/2 teaspoons vanilla 2 cups of canned pumpkin 4 cups all-purpose flour FROSTING 1\/2 cup butter 1\/2 cup packed brown sugar 1\/4 cup milk 1\/2 teaspoon vanilla 1 1\/2 teaspoon cinnamon 4 to 5 cups powdered sugar ,add until desired consistency orange food coloring black sprinkles INSTRUCTIONS Preheat oven to 350 degrees. In a large bowl beat the 2 cups of butter with an electric mixer on medium speed for 30 seconds. You can also do it by hand. Next add the sugar, the baking powder, baking soda and salt. Then add the cinnamon, and allspice. Next beat until combined. Now in a separate bowl beat in the eggs and 1 1\/2 teaspoons of vanilla until combined. Then beat the eggs and vanilla into the mixture. Now beat in the pumpkin. Next add the flour little by little and hand beat with fork. Mix really well. Now drop dough by heaping tablespoon about 2 inches apart on ungreased cookie sheets. Lightly press it down, just a little bit. Now bake for 10 to 12 minutes or until tops are set. Transfer to wire racks to cool. Once your cookies are cooled off start your frosting. In a small saucepan heat the 1\/2 cup butter and brown sugar until completely melted. Next transfer the mixture to a medium bowl. Now stir in milk, 1\/2 teaspoon of vanilla, cinnamon and powdered sugar. Mix till smooth. Add the food coloring. I use a gel. The pic doesn’t do it justice. Now spread frosting on cookies and top with the sprinkles. Your neighbors are gonna be wondering what that amazing smell is, hahaha. I’m baking them as I type this and my house smells soooo good. I cant wait to eat them. These cookies are one of those that you never get tired of having. Mmm Mmm Mmm. If you make these please drop me a comment in my email and let me know what you think of them. I love hearing back from all of you. Hope you all had a Blessed Mabon and a great Samhain.
