Pixie Witch Kitchen – A Second Helping

Zucchini Lasagna

I was gifted this HUGE beautiful Zucchini that my friends son Isaias grew.

Isaias you are amazing buddy. Look at the goodies he grew.

So what do I do with so much zucchini? Hmmmm so many ideas popped up but I went with my Zucchini Lasagna. I also made a zucchini bread but didnt take pics. I’ll add it in a couple of months. Ok ready to make this yummmy dinner? Lets get started.

Ingredients

1 tbsp olive oil

1 large onion chopped

4 cloves garlic minced

1 lb ground turkey or beef

2 tsp Italian seasonings

1 tsp dried basil

1 tsp garlic powder

1 tsp salt

1/2 tsp pepper

28 oz diced tomatoes with green peppers, celery and onions

1/2 a giant zucchini haha or about 3-4 small zucchinis

2 cups mozzarella cheese shredded

2 cups Italian style cheese

1 1/2 cups ricotta cheese

Parmesan cheese grated to sprinkle on top

Lets start by peeling the zucchini

Now slice the zucchini into slices about 1/4″ thick if you are using a huge zucchini or about 1/4″ thick for small ones.

Next add the olive oil to a large skillet over medium heat. Add onion and cook for a couple minutes until onion is soft.

Add the garlic powder, Italian seasonings, basil, salt and ground turkey. Mix well and cook. Drain the grease.

Now add the tomatoes, stir and simmer for 10 mins.

Stir well and your meat sauce is now ready.

Next preheat oven to 375 F degrees. Use a 9×13 inch baking dish.

Now lets put it together. Start with a layer of zucchini.

Then sprinkle with the Italian and mozzarella cheese.

Now add some meat sauce.

Now add some yummy ricotta cheese.

Now repeat 2 more times so you have 3 layers. End it with another layer of the 2 cheeses then sprinkle with the parmesan cheese.

Put in the oven for about 35 to 45 minutes or until the top is starting to get golden and the cheese is bubbly. Keep an eye on it mine got a bit to browned ooops lol

Let it cool for 10 mins before cutting. Serve with garlic bread and or a salad.

Tips

Sometimes you can remove excess water from the zucchini by laying out the zucchini slices over paper towels, drizzle some salt over the slices of zucchini, then place another paper towel over the top to soak up all the water. You’ll notice that within a couple minutes the paper towels will be wet already. I didnt need to do this with mine but it seems the smaller ones you might want to so it doesnt get mushy when you bake it.

You can also add muhrooms, green bell peppers or any other veggies you want to it.

Pretty simple recipe right? If you try it I’d love to hear back from you. All my contact info is below. Enjoy and Blessed Be.

About the Author:

Sarah Mascorro AKA Pixie Witch. I’m 45 years young and have been married to my soul mate for 28 plus year. We have 2 boys and live in good ole California. I was actually born in England but came to the states when I was 5.

I’m Pagan/Wiccan and have been practicing over 10 years now. I always knew I was different but didn’t figure it out till 2008, that’s when I came out of the broom closet. I’m a Witch and I’m proud of it. When I say different I mean I just didn’t fit in with what others did or believed in. I’m sure you all totally understand that feeling. Now I know though I’m not different, I’m me and there are so many others like me.

I hold rituals at my house with my circle for each Sabbat and we do a lot of witch crafts together. I love to do all types of crafts not just witchy like I make dream catchers, wood burn, make soaps and bath salts. I love to cross stitch and make latch hook rugs. I have a small page on Facebook that I sell my goodies. You can FIND THEM HERE at Pixiewitchcorner.

I love to cook and bake. My mother was a great cook & I picked up her talent. I love to make my own fun recipes and add some magick to them. I mean cooking is magickal right so why not add a little extra to it. I started a Kitchen Witch Group on Facebook over 4 years ago. If your on FB come check it out.

I love to spend my time with my hubby & boys. We love to be out in nature especially the beach & the forest. I belong in the forest, I guess all pixie’s do hee hee. My friends call me Pixie due to my size I’m 5’1 and barely 100 pounds with really long red and silver hair hee hee.

I collect stones like hag stones, labradorite, amethysts, quartz etc… I also collect witch statues, Goddess statues, owls, crows and the Moon. Oh & sea glass I cant forget that. Do tattoos count? If so I have over a 100 of them I’m about 80% covered.

Another hobby is photography. I love taking pictures of nature such as flowers, animals, trees, mountains, the ocean and my favorite of all the Moon.

I love to unwind two ways one is with a great book, usually witchy or paranormal ones catch my attention the most. I do read & research a lot about the human body and diseases due to my families rare health issues. The other is going outside under the stars and Moon. What a great way to end the day looking up at the dark beautiful sky.

That’s pretty much it, you see what you get hee hee. You either love me or hate me. Hopefully you all will love me haha.
