Pixie Witch Mango Salsa
Today we are going to make a really yummy mango salsa. Its a bit different from the traditional mango salsa and so simple to make. You can eat it as a salsa with some corn chips especially the hint of lime corn tortilla chips, the flavors are amazing together. It is also delish served over fish or on the side of chicken. I made BBQ chicken with mine and served it on the side. It has only 6 simple ingredients and only takes about 10 mins to prepare.
1 Mango peeled and diced
3-4 Small Tomatoes, diced
3-4 TBSP. Cilantro, cut up
1/2 Yellow Onion, diced
1/2 Jalapeno , diced small
3 TBSP Orange Juice, fresh or store bought
Dash of Salt, optional
Peel and chop up the mango and toss it into a medium sized bowl.
Now dice the tomatoes and add to the bowl.
Then cut up the cilantro. I like to use my herb scissors or you can just use a knife.
Next chop up the onion and place in the bowl.
Now diced up the Jalapenos really small and add to the bowl.
Now pour in the orange juice. Add some salt if you want.
Now mix it gently but enough to make sure the juice coats it all.
That’s it. Simple, fast and delish. You can store it in the refrigerator for 2 days. You can easily double or triple the batch. Hope you all enjoy it.

Use this many-layered food to peel away problems in life and to dispel anger. The onion is also a love food and is said to increase male virility.

I love to spend my time with my hubby & boys. We love to be out in nature especially the beach & the forest. I belong in the forest, I guess all pixie’s do hee hee. My friends call me Pixie due to my size I’m 5’1 and barely 100 pounds with really long red and silver hair hee hee.
I collect stones like hag stones, labradorite, amethysts, quartz etc… I also collect witch statues, Goddess statues, owls, crows and the Moon. Oh & sea glass I cant forget that. Do tattoos count? If so I have over a 100 of them I’m about 80% covered.
Another hobby is photography. I love taking pictures of nature such as flowers, animals, trees, mountains, the ocean and my favorite of all the Moon.
I love to unwind two ways one is with a great book, usually witchy or paranormal ones catch my attention the most. I do read & research a lot about the human body and diseases due to my families rare health issues. The other is going outside under the stars and Moon. What a great way to end the day looking up at the dark beautiful sky.
